A walk-in cold room is a great help for a small chicken farm. It keeps fresh chicken meat safe and gives you more time to sell it. Here is what you need to know.

1. Why a small chicken farm needs a walk-in cold room

A small farm does not process chickens every day. Orders often come in waves, especially around holidays. Without a good cold room, you have to sell all the meat right away. If the weather is bad or sales are slow, you may lose a lot of meat.

A walk-in cold room is not just a big freezer. You can walk inside and stack boxes neatly. For a farm with a few thousand chickens, a cold room of 15 to 25 cubic meters is usually enough. Once the meat is inside, you can sell it when the time is right. You can take big orders without worry and sell when the price is good.

2. The right temperature for chicken meat

For frozen chicken, the best temperature is between -18°C and -23°C. This range stops bacteria from growing. It also keeps the meat from getting too dry or tough.

Keep these points in mind:

  • Fast freezing‌: After putting chicken in the cold room, try to bring its core temperature down to -18°C within two hours. Slow freezing makes large ice crystals inside the meat. These crystals break the cell walls. When you thaw the meat, a lot of juice will leak out and the meat will be dry.
  • Steady temperature‌: Keep the temperature change within 2°C. If the temperature goes up and down a lot, frost will form and melt on the meat again and again. This hurts the taste and shortens the shelf life.
  • Thawing tip‌: Twelve hours before you need the meat, move it from the freezer to a cooler set at 0°C to 4°C. Slow thawing helps keep the meat tender.

3. How long different parts can be stored

Different parts of the chicken last for different lengths of time:

  • Chicken breast‌: Lean and firm. Best used within 3 months. It tends to dry out if kept longer.
  • Chicken thighs‌: Have some fat. Can be stored for 6 to 8 months.
  • Chicken wings‌: Have more skin and fat. Can be kept for up to 10 months.
  • Whole chicken‌: Remove the inner parts and pat the skin dry. Can be stored for about 6 months.
  • Inner parts‌: Hearts and gizzards should be used within 2 months. The taste goes down after that.

4. Good packaging matters a lot

How you wrap the meat is very important:

  • Vacuum sealing‌: Removes all air. The meat can last up to 12 months. This is the best way for long storage.
  • Plastic wrap plus foil‌: First wrap the meat tightly in plastic wrap. Then add a layer of aluminum foil to stop freezer burn. This keeps the meat good for about 6 months.
  • Plain plastic bags‌: Only good for short-term use. Try to use the meat within 2 months.

Before wrapping, always wipe off any blood or water from the meat. If blood freezes, it forms sharp ice crystals. These crystals cut the meat fibers. When you thaw it, the taste will be much worse.

5. Daily care tips

  • Stack with space‌: Leave 5 to 10 cm of space between boxes. This lets cold air flow evenly. Do not pile boxes right against the wall.
  • Open the door quickly‌: Keep the door open for as short a time as you can. This is very important in summer. If the door is open too long, the inside gets warm. The cooling unit then has to work extra hard, and your power bill will go up.
  • Remove frost on time‌: Check the cooling coils. When the frost layer is thicker than 5 mm, you need to defrost. A thick frost layer makes the cooling unit less efficient. It can use 20 to 30 percent more power.
  • Pre-cool the meat‌: Fresh chicken is often still warm. Cool it down to about 4°C first, using ice water or a pre-cooling room. Then put it into the freezer. This makes the cold room’s job much easier.

6. Tips for choosing a cold room for a small farm

You do not need the biggest or most expensive setup. Pick something that works well, saves power, and is easy to fix:

  • Size‌: Think about how many chickens you process each day and how often you sell. For most small farms, 15 to 20 cubic meters is enough.
  • Wall panels‌: Choose panels with at least 10 cm of polyurethane foam. Good insulation saves a lot of power over time.
  • Cooling unit‌: Pick a compressor from a brand with a good name. Make sure there is a repair service nearby. In the countryside, quick repair service is very important.
  • Floor‌: The floor inside the cold room should be non-slip. Your hands and boots may have oil and water on them. Safety comes first.
